This critical 24-hour window is key to preserving the highest quality extra virgin olive oil, as olives begin to ferment and degrade rapidly after picking. After resting for a month in 20-litre tins, the Organic Extra Virgin Olive Oil is bottled directly into 500ml ceramic containers. The use of ceramic not only adds beauty but also protects the oil from sunlight, preserving its vibrant green colour and also the bold, peppery taste of the Lianolia olives.  Fitted with an easy pouring cork stopper,  the containers are fully refillable and reusable, reflecting our ongoing commitment to sustainability.
